Baked Apples with Feta, Honey, and Cranberries

Delicious baked apples filled with feta cheese, honey, and cranberries, perfect for cozy nights or gatherings.

Ingredients

  • 4 pieces Firm Apples (Honeycrisp or Granny Smith)
  • 1 cup Feta Cheese (crumbled)
  • 1/2 cup Dried Cranberries
  • 1/4 cup Honey
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Butter
  • 2 tablespoons Fresh Mint (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash the apples and cut off the top quarter; scoop out the core gently.
  3. In a bowl, mix feta, cranberries, honey, cinnamon, and vanilla extract until combined.
  4. Stuff each apple with the filling, packing it snugly.
  5. Place the filled apples in a baking dish and add a small pat of butter on top of each.
  6. Pour a cup of water into the bottom of the dish, cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes until apples are tender.
  8. Let cool slightly and garnish with fresh mint before serving.

Notes

For variations, substitute butter with coconut oil for a vegan option or add nuts for extra crunch.
