  • 1 cup apple cider
  • 1 teaspoon vanilla extract

  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat the softened butter and brown sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing until incorporated.
  5. Add the apple cider and 1 teaspoon vanilla extract, mixing until just combined.
  6. Gradually add the dry ingredients to the wet mixture until combined, being careful not to overmix.
  7. Scoop heaping tablespoons of dough onto prepared baking sheets, leaving space between each.
  8. Bake for 12-15 minutes, until edges are golden and centers may look soft.
  9. Let cookies cool on the sheets for 5 minutes, then transfer to wire racks to cool completely.
  10. In a saucepan, melt butter for the filling. Stir in brown sugar, heavy cream, and vanilla extract; cook until smooth and boiling for about 1 minute.
  11. Let the caramel cool for about 10 minutes.
  12. Spread or pipe caramel filling onto the flat side of half the cookies and sandwich with the remaining cookies.
