Andalusian Alfajores

Delightful soft and flavorful cookies from Andalusia, enriched with almond flour and sweet spices.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon clove
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 egg yolk
  • Additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour, almond flour, and powdered sugar, whisking to blend thoroughly.
  3. In another bowl, beat the softened butter and honey until creamy.
  4. Add the egg yolk and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually incorporate the flour mixture along with cinnamon, clove, and nutmeg until a dough forms.
  6. Roll the dough into small balls, about a teaspoon each, and arrange them on a lined baking sheet.
  7. Flatten each ball slightly with your palm.
  8. Bake for 12-15 minutes or until lightly golden.
  9. Allow the cookies to cool on the baking sheet before transferring to a wire rack.
  10. Dust with powdered sugar before serving.

Notes

Store in an airtight container at room temperature for about a week or freeze for up to three months.
