Brown Sugar Roasted Butternut Squash

A quick and tasty side dish featuring roasted butternut squash, sweetened with brown sugar and seasoned to perfection.

  • 1 medium butternut squash (about 2 lbs)
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the butternut squash and cube it into 1-inch pieces.
  3. Toss the cubed squash with olive oil, brown sugar, salt, black pepper, and cinnamon until evenly coated.
  4. Spread the coated squash on a baking sheet, ensuring they are not overcrowded.
  5. Roast in the oven for 25-30 minutes until tender and caramelized.
  6. Remove from the oven and serve warm.

Notes
